If you’re like us, you live for breakfast (especially after a morning sweat). Every now and then we get tired of our classic eggs & avocado, so why not mash up some sweet potatoes and make pancakes out of them! So we did a little Pinterest digging and we found this super simple (and might we add, delicious) Sweet Potato Pancakes recipe. They had such a great flavor, easy to make and they can even be reheated in the microwave or toaster! Now get on with your bad self – go mash some sweet potatoes.

Ingredients:

  • 1/2 cup sweet potato, microwaved until soft and mashed
  • 2 eggs
  • 1 tbsp coconut flour
  • 1 1/2 tsp cinnamon
  • 1/4 tsp baking soda
  • 1/4 tsp vanilla
  • coconut oil, for pan

Instructions:

  1. Mix together all ingredients but the coconut oil and beat just until a batter forms.
  2. Heat coconut oil in a skillet over medium heat. Pour about 1/4 cup of batter out and cook until bubbles start to form. Flip the pancake and cook for about another minute or two until fully cooked.
  3. Repeat with the rest of the batter. Enjoy!
