Protein Paleo Almond Chip Cookies

Who said eating healthy meant cutting out sweats?  We sure didn’t!  Thanks to one of our favorite foodies, Rachael from @Rachaelsgoodeats for finding this recipe! Now you can TREAT YO SELF but ixnay the regret!

Rachael added NuZest, a vegetable protein that’s high in protein but low in carbs and fat. Which makes these little treats that much more perfect for a post-workout nibble!

Recipe

– 1/2c creamy unsalted almond butter (I used Trader Joes)
– 1/4c organic coconut sugar
– 1 tbsp melted coconut oil
– 1 egg
– 2 tbsp coconut flour (I used Trader Joes)
– 2 tbsp vanilla NuZest plant protein
– 1/4 tsp baking soda
– 1/4 tsp sea salt
– Small handful dark chocolate chips {can sub dairy-free chips or cacao nibs for full paleo}

 

Directions 

In the bowl of a food processor {I used my kitchen aid wand mixer}, add in almond butter + coconut sugar + coconut oil; process about 1 min. Add in eggs and process again. Next, add in coconut flour + baking soda + sea salt; process again until a dough forms. Gently fold in chocolate chips.

Use a cookie scoop or spoon to drop dough onto parchment paper lined cookie sheet {I left the dough as is & cookies turned out puffier}
Bake for 8-10 minutes or until cookies turn slightly golden brown around the edges. Allow to cool on cookie sheet for at least 5 minutes. Makes around 8 cookies {halved recipe}
