If you don’t have an Instant Pot, you might need one now. We got ours for Christmas and we’re already 6 recipes deep and so in love. The cooking times are so much faster than a crock pot AND the food is more flavorful. We’re huge fans of the saute function–no need to saute on the stove and then transfer to the Instant Pot (like you’d have to do with the ole crock pot). Here are favorite Instant Pot recipes you should make ASAP.
Buffalo Chicken Stuffed Sweet Potatoes. This might be the most flavorful dish we’ve ever made. Like, ever. It’s SO good. Savory buffalo chicken with a homemade tangy creamy sauce—and it’s all gluten and dairy free. If you’re not about sweet potatoes, this recipe also tastes great on top of a bed of lettuce with avocado. But then again, so do most things in our eyes. Use the tangy sauce as dressing. Shredded Chicken. It’s hardly a recipe, but it’s been a staple for us on a weekly basis. It cooks in about 15 minutes, is much more moist than what we were doing with the ole crock pot for 4 hours and it’s very versatile. We throw this chicken into salads, soups, stir fry, tacos, zoodle dishes, curries, enchiladas…the list goes on.
Tomato Basil Soup. Cooks fast just like every dish on this list, but does not lack flavor. We used full fat coconut milk instead of cream cheese to make it nice and creamy (but dairy free). The crispy parmesan chickpeas make the perfect topper, and we loved a good avocado toast on the side.
Grass-Fed Meatballs. Goodbye dry and overcooked meatballs, hello moist and flavorful! These were seriously tasty and perfect on top of pasta (like Banza) or zucchini noodles. If you have a smaller Instant Pot (3 quart or 6 quart), we’d recommend browning them in batches, and not all at the same time so they don’t stick together.
Cashew Chicken. Healthy, light, filling and perfect over a bed of rice or quinoa. The chicken is so moist and flavorful, and they make the perfect leftovers too—make a big batch and enjoy throughout the week!
