You may have seen these popping up in your instagram feed lately and they seem to be ALL the rage! And we are jumping on the bandwagon because what’s not to love about a bowl of sushi? (For this recipe we cooked our fish, but you can easily try this out with sushi-grade salmon or tuna!)

Directions:

Prepare base of bowl by cooking the rice or cauliflower rice according to package directions. Add the fresh basil while rice is cooking for added flavor.

To prepare the salmon filets, cut in cubes but not all the way through to where you cut through the skin. You want the salmon to stay together while cooking, but have enough room to allow the Sweet Thai Chilli Sauce to marinate the fish while it cooks.

Spoon enough Sweet Thai Chilli Sauce over the salmon to coat. Cover with foil and bake at 350 degrees for 35 minutes.

For the zucchini noodle marinade, add the juice of half a lime, 4 Tbls. of Sweet Thai Chilli Sauce and mix.

Next, toss the lime juice and Sweet Thai Chilli Sauce mix with zucchini noodles in a large bowl until evenly coated. Then, add 1/2 Tbls. sesame oil and 1/2 Tbls. regular olive oil to a skillet over medium heat. Add in zucchinni noodles and sautée until soft. Around 10-12 minutes.

Next, steam the edamame beans and add a dash or 2 of course kosher salt. For an extra kick, you can also add a dash of cayenne pepper!

Once you have prepared all of the above ingredients, it is time to build your bowl! And this is the fun part! You can build the bowl however you would like, but here is how we built ours in order from bottom to top: a 1/2 cup rice as the base, 1/2 of a 6 oz. filet of salmon, a 1/2 cup of the zucchini noodles, a handful of shredded carrots, 1/4 cup edamame beans, a handful of crispy onions (though you may want more because they are SO GOOD) and any other toppings you would like. We added Sriracha for an extra spicy kick! I also think some sliced avocado or some crispy sweet potatoes would be a nice touch.
